Veggie-Loaded Chocolate Muffins are a healthy snack for toddlers, combining hidden vegetables with chocolate for a tasty treat.

- 1 cup whole wheat flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup finely grated zucchini
- 1/2 cup finely chopped spinach
- 1/4 cup finely grated carrot (optional)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil (or another vegetable oil)
- 2 large eggs
- 1/2 cup milk (dairy or plant-based)
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, combine whole wheat flour, cocoa powder, baking soda, salt, and cinnamon (if using). Stir until well mixed.
- In another bowl, combine grated zucchini, chopped spinach, and grated carrot. Squeeze out excess moisture from the vegetables.
- In a separate bowl, whisk together honey (or maple syrup), coconut oil, eggs, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the grated vegetables and chocolate chips (if using). If the batter is too thick, add a splash of milk to loosen it.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Store muffins in an airtight container for up to 3 days.
- These muffins freeze well for up to 3 months.
