Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 4 flour tortillas
  • 1 cup cooked bacon (or sausage), chopped
  • 1 bell pepper, diced
  • 1/4 cup green onions, chopped
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)

Instructions

  1. Whisk the eggs, milk, salt, and black pepper together in a medium bowl until smooth and frothy.
  2. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour in the egg mixture and gently stir until just set but still slightly moist.
  3. Lay out your flour tortillas. Distribute the scrambled eggs over two tortillas, leaving a half-inch border around the edges.
  4. Sprinkle the cooked bacon, diced bell peppers, and chopped green onions over the eggs.
  5. Cover the fillings with shredded cheese, then place the remaining tortillas on top. Press down gently to seal.
  6. Melt half of the remaining butter in the skillet. Place one quesadilla in the skillet and cook until golden brown and crispy.
  7. Flip the quesadilla and cook until the second side is golden and the cheese is melted. Transfer to a cutting board and repeat with the second quesadilla.
  8. Let the quesadillas rest for about 1 minute before slicing into wedges. Serve immediately with salsa and sour cream.
