- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 4 flour tortillas
- 1 cup cooked bacon (or sausage), chopped
- 1 bell pepper, diced
- 1/4 cup green onions, chopped
- 1 1/2 cups shredded cheese (cheddar or Mexican blend)
Instructions
- Whisk the eggs, milk, salt, and black pepper together in a medium bowl until smooth and frothy.
- Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter. Pour in the egg mixture and gently stir until just set but still slightly moist.
- Lay out your flour tortillas. Distribute the scrambled eggs over two tortillas, leaving a half-inch border around the edges.
- Sprinkle the cooked bacon, diced bell peppers, and chopped green onions over the eggs.
- Cover the fillings with shredded cheese, then place the remaining tortillas on top. Press down gently to seal.
- Melt half of the remaining butter in the skillet. Place one quesadilla in the skillet and cook until golden brown and crispy.
- Flip the quesadilla and cook until the second side is golden and the cheese is melted. Transfer to a cutting board and repeat with the second quesadilla.
- Let the quesadillas rest for about 1 minute before slicing into wedges. Serve immediately with salsa and sour cream.
