Creamy mashed potatoes shaped into nests, baked and filled with cheese, veggies, or meat. A crowd-pleasing side or appetizer—crispy outside, soft inside.
Ingredients

- 3 cups mashed potatoes (leftover or freshly made)
- 1 egg
- ½ cup shredded cheddar cheese (for potato mix)
- Salt and pepper to taste
- ½ cup finely chopped vegetables (bell peppers, onions, spinach, etc.)
- ½ cup shredded mozzarella or cheese of choice (for filling)
- Butter or oil for greasing muffin tin
Instructions
- Preheat oven to 400°F (200°C) and grease a muffin tin.
- In a bowl, mix mashed potatoes, egg, cheddar cheese, salt, and pepper.
- Spoon the mixture into muffin tins, pressing in the center to create a nest shape.
- Bake for 15–20 minutes until edges are golden and crisp.
- Remove and fill nests with vegetables and mozzarella.
- Return to oven for 5–7 minutes, until cheese melts.
- Cool slightly before removing and serving.
