Delight in homemade Spiced Easter Doughnuts filled with creamy vanilla and zesty marmalade, perfect for celebrating spring.

- 190 ml lukewarm water
- 60 grams caster sugar
- 8 grams dry active yeast
- 550 grams all-purpose flour
- 10 grams salt
- 3 teaspoons mixed spice
- 2 teaspoons ground cinnamon
- 0.5 cup raisins
- 0.25 cup mixed peel
- 1 orange orange zest
- 3 pieces eggs
- 80 grams butter
- rice bran oil
- 0.5 cup white sugar
- 3 teaspoons ground cinnamon
- 500 ml cream
- 1 teaspoon vanilla paste
- orange marmalade
Instructions
- In a small bowl, combine the lukewarm water, caster sugar, and dry active yeast. Set aside for about 10 minutes until foamy.
- In a large bowl, mix together the flour, salt, mixed spice, ground cinnamon, raisins, mixed peel, and orange zest. Add the eggs and activated yeast mixture, combining until just mixed.
- Knead the dough for about five minutes, adding in the cubed butter, kneading until glossy and smooth. Cover and rest for two hours.
- Cut the risen dough into 12 portions, shape into balls, cover, and let prove for another 2 hours.
- Heat rice bran oil in a pot until it reaches 180°C (350°F). Prepare a cooling rack with paper towels and mix sugar with ground cinnamon.
- Carefully lower doughnuts into hot oil, frying until golden brown, about 2-3 minutes each side. Drain and toss in sugar and cinnamon. Repeat with remaining doughnuts.
- Once cooled, whip the cream and vanilla paste together until soft peaks form.
- Make a cut into the top of each cooled doughnut and fill with whipped cream and a dollop of orange marmalade.
