- For the Smash Burger Filling:
- 1 lb ground beef (80/20 blend for juiciness)
- Salt and pepper (to taste)
- 1 tablespoon onion powder (optional)
- 1 tablespoon garlic powder (optional)
- 4 slices of cheese (American, cheddar, or your choice)
- For the Quesadillas:
- 4 large flour tortillas
- 1 cup shredded cheese (Mexican blend or your choice)
- Toppings (optional):
- Lettuce
- Tomato (sliced)
- Pickles
- Onion (sliced)
- Ketchup
- Mustard
Instructions
- Preheat a cast-iron skillet or griddle over medium-high heat.
- Add the ground beef to the hot skillet. Season with salt, pepper, onion powder, and garlic powder (if using). Smash the beef down with a spatula to form thin patties. Cook for about 2–3 minutes until browned.
- Flip the patties and place a slice of cheese on top of each one. Cook for another 1–2 minutes until the cheese is melted. Remove from heat and set aside.
- Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese evenly over the tortilla.
- Layer the cooked smash burger patties on top of the cheese, then add any desired toppings like lettuce, tomato, pickles, or onions.
- Sprinkle the remaining shredded cheese over the filling and top with a second tortilla.
- Cook for about 3–4 minutes on one side until the bottom tortilla is golden brown and the cheese has melted. Carefully flip the quesadilla and cook for an additional 3–4 minutes until the other side is golden brown.
- Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling.
- Cut the quesadillas into wedges and serve with your favorite dipping sauces like ketchup, mustard, or salsa.
