- 3 lbs ripe Roma or plum tomatoes, halved
- 1 large onion, chopped
- 6 cloves garlic, peeled
- 3 tbsp olive oil, divided
- Salt and freshly ground black pepper, to taste
- 1 tsp sugar, optional
- 1/2 tsp red pepper flakes, optional
- 3 cups vegetable broth
- 1/2 cup fresh basil leaves, packed
- 1/4 cup heavy cream or coconut milk, optional
- Croutons or bread, for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange halved tomatoes cut-side up, add garlic and onion. Drizzle with 2 tablespoons olive oil, season with salt and pepper.
- Roast for 35–40 minutes until tomatoes are slightly charred and caramelized.
- Let roasted vegetables cool slightly. Transfer to a blender or use immersion blender in a pot to blend until smooth.
- Pour mixture into large soup pot over medium heat. Add vegetable broth, red pepper flakes, and sugar if using. Simmer uncovered for 10 minutes.
- Stir in fresh basil and blend again for a smooth consistency. Add cream or coconut milk if using, then simmer another 5 minutes.
- Adjust seasoning. Serve hot with croutons or bread, and garnish with a drizzle of olive oil or swirl of cream.
