- 1 tablespoon unsalted butter, softened (for filling)
- 1–2 tablespoons heavy cream (to adjust filling consistency)
Instructions
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chunks and optional chopped pistachios.
- Cover and refrigerate dough for at least 1 hour. For the filling, combine shelled pistachios, powdered sugar, and 1 tablespoon softened butter. Mash into a paste, adding heavy cream as needed to form small balls.
- Chill pistachio filling balls for 15-20 minutes. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Flatten a portion of cookie dough, place a chilled filling ball in the center, and enclose it completely with the dough. Roll into a smooth ball and place on baking sheets.
- Bake for 10-12 minutes, until edges are set and centers look slightly soft. Cool on baking sheets for 5-10 minutes before transferring to a wire rack to cool completely.
