  • 1 tablespoon unsalted butter, softened (for filling)
  • 12 tablespoons heavy cream (to adjust filling consistency)

Instructions

  1. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  2. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chunks and optional chopped pistachios.
  3. Cover and refrigerate dough for at least 1 hour. For the filling, combine shelled pistachios, powdered sugar, and 1 tablespoon softened butter. Mash into a paste, adding heavy cream as needed to form small balls.
  4. Chill pistachio filling balls for 15-20 minutes. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Flatten a portion of cookie dough, place a chilled filling ball in the center, and enclose it completely with the dough. Roll into a smooth ball and place on baking sheets.
