Crispy, creamy, and chocolatey homemade Nutty Buddy Bars.
Ingredients

- 24 rectangular wafer cookies
- 1 cup creamy peanut butter
- 1/4 cup powdered sugar
- 2 tablespoons salted butter, softened
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional)
- Handful of roasted peanuts, chopped (optional)
Instructions
- Line a baking sheet with parchment paper.
- Mix peanut butter, powdered sugar, and softened butter in a bowl until smooth.
- Lay out half of the wafers on the tray and spread a layer of the peanut butter mixture on each one.
- Top with the remaining wafers to create sandwiches, pressing gently to secure.
- Melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl or double boiler until smooth.
- Dip each wafer sandwich fully in melted chocolate, then place back on the parchment-lined tray.
- Sprinkle chopped roasted peanuts on top while the chocolate is still wet, if desired.
- Chill in the fridge for 20 minutes or until the chocolate sets.
- Slice and serve.

- Store in an airtight container for up to a week.
