- 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 bell peppers, diced
- 2 tomatoes, diced
- 2 cups chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon ground ginger
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (or to taste)
- Salt and black pepper to taste
- 2 tablespoons vegetable oil
- Chopped fresh cilantro or parsley for garnish
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the diced chicken and cook, stirring occasionally, until the chicken is lightly browned, about 5-7 minutes.
- Add the diced onion, minced garlic, and diced bell peppers. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
- Stir in the diced tomatoes, tomato paste, chicken broth, ground ginger, smoked paprika, dried thyme, and cayenne pepper. Season with salt and black pepper to taste.
- Bring the stew to a boil, then reduce the heat to low and let it simmer, uncovered, for 20-25 minutes, or until the chicken is cooked through and the flavors have melded.
- Taste and adjust seasoning as needed.
- Serve the Nigerian Chicken Stew hot, garnished with chopped fresh cilantro or parsley. Enjoy with fluffy white rice or crusty bread.
