Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced
  • 2 tomatoes, diced
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon ground ginger
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (or to taste)
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro or parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the diced chicken and cook, stirring occasionally, until the chicken is lightly browned, about 5-7 minutes.
  3. Add the diced onion, minced garlic, and diced bell peppers. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
  4. Stir in the diced tomatoes, tomato paste, chicken broth, ground ginger, smoked paprika, dried thyme, and cayenne pepper. Season with salt and black pepper to taste.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer, uncovered, for 20-25 minutes, or until the chicken is cooked through and the flavors have melded.
  6. Taste and adjust seasoning as needed.
  7. Serve the Nigerian Chicken Stew hot, garnished with chopped fresh cilantro or parsley. Enjoy with fluffy white rice or crusty bread.
