- 1.5 lbs salmon fillet
- 1 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Pat the salmon fillet dry and season with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the salmon for 3-4 minutes per side, until golden brown and cooked through. Remove salmon from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Pour in chicken broth and heavy cream. Bring to a simmer.
- Stir in Parmesan cheese and Italian seasoning. Cook until the sauce thickens.
- Add spinach and cook until wilted.
- Return the salmon to the skillet and spoon the creamy Tuscan sauce over it.
- Serve immediately.
Notes
- For a lighter sauce, use half-and-half instead of heavy cream.
- Add cooked pasta or rice to the skillet for a complete meal.
- Garnish with fresh basil or parsley before serving.
