A hearty, comforting casserole that layers savory homemade meatloaf with creamy loaded mashed potatoes, crispy bacon, and melted cheese.

- 1½ pounds ground beef (80/20 or lean)
- 1 egg
- ½ cup breadcrumbs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 2 pounds russet or Yukon Gold potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup sour cream
- ½ cup warm milk
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Salt and pepper, to taste
- 2 green onions, finely sliced (for garnish)
- ½ cup extra shredded cheddar for topping
Instructions
- Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.
- Combine ground beef, egg, breadcrumbs, ketchup, Worcestershire, seasonings, and spices. Mix gently.
- Press meatloaf mixture into the baking dish. Bake uncovered for 20–25 minutes.
- Cook cubed potatoes in salted water until fork-tender (about 15 minutes). Drain well.
- Add butter, sour cream, warm milk, cheese, salt, and pepper. Mash until creamy.
- Spread mashed potatoes over cooked meatloaf. Top with extra cheese and crumbled bacon.
- Return to oven for 15–20 minutes until cheese is melted and golden.
- Cool slightly, garnish with green onions, and enjoy.
