Ingredients

- 1 cup orzo pasta
- 1 pound shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1 cup spinach (fresh or baby spinach)
- 1 lemon (juiced and zested)
- 1/2 cup feta cheese (crumbled)
- Salt and pepper (to taste)
- Fresh parsley (optional, for garnish)
Instructions
- In a large pot, bring salted water to a boil.
- Add the orzo pasta and cook according to package instructions until al dente, about 8–10 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque.
- Stir in the cherry tomatoes and spinach, cooking for about 2 minutes until the spinach wilts.
- Add the cooked orzo along with the lemon juice and zest, tossing everything together to combine.
- Gently fold in the crumbled feta cheese, allowing it to warm slightly.
- Taste and adjust with more salt and pepper if needed.
- Serve warm, garnished with fresh parsley if desired.
- Pair with a side salad or crusty bread if you like.
Notes
- Feel free to substitute shrimp with chicken or tofu.
- Store leftovers in an airtight container in the fridge.
- Reheat gently to avoid overcooking the shrimp.
