- 1 cup unsalted butter (2 sticks), softened
- 2½ cups granulated sugar
- 5 large eggs
- 3 cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup whole milk
- ¼ cup key lime juice
- 1 tablespoon key lime zest
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons key lime juice
- 1 teaspoon key lime zest
Instructions
- Preheat to 325°F (160°C) and grease/flour a 10-cup bundt pan.
- Beat butter and sugar until light and fluffy (3–5 minutes).
- Mix in eggs one at a time, beating well after each.
- Whisk flour, baking powder, and salt in a separate bowl.
- Alternate adding dry ingredients and milk into the butter mixture, beginning and ending with dry ingredients.
- Mix in key lime juice, zest, and vanilla until just combined.
- Pour batter into prepared pan and bake 70–80 minutes, or until a toothpick comes out clean.
- Cool 10–15 minutes in the pan, then invert onto a rack to cool completely.
- Whisk glaze ingredients and drizzle over the cooled cake.
