Description

Ingredients

  • 1 cup finely chopped cremini mushrooms
  • 1 sheet puff pastry (thawed)
  • 2 tbsp Dijon mustard
  • 1 egg (beaten with a splash of water for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season beef tenderloin with salt and pepper. Sear in a hot skillet with oil for 3-4 minutes per side until browned but not cooked through. Let rest.
  2. In the same skillet, sauté chopped mushrooms for 5-7 minutes until golden brown; season with salt and pepper.
  3. Roll out thawed puff pastry into rectangles about 1/8-inch thick. Spread Dijon mustard over cooled beef, top with sautéed mushrooms, and wrap in pastry, sealing edges well.
  4. Brush each Wellington with egg wash and place seam-side down on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes or until golden brown and puffed up. Serve warm.
