  • 2 cups riced broccoli

  • 8 ounces sharp cheddar cheese, freshly grated

Instructions

  1. Cook the riced broccoli until tender-crisp by blanching in boiling salted water for 1-2 minutes, then immediately transferring to an ice bath and draining thoroughly. Cook the riced cauliflower until tender-crisp by steaming or microwaving, then drain any excess moisture very well.
  2. Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium-high heat. Add the riced cauliflower and sauté for 5-7 minutes, stirring occasionally, until it starts to dry out slightly and develops a light golden hue. This helps prevent a watery casserole. Set aside.
  3. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with butter or cooking spray.
  4. In a large saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 1/2 cup heavy whipping cream and 1 teaspoon mustard powder. Bring to a gentle simmer, then reduce heat to low. Add the 8 ounces of freshly grated sharp cheddar cheese. Stir until the cheese is completely melted and the sauce is smooth and luscious. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
  5. In a very large mixing bowl, gently combine the cooked riced broccoli, sautéed riced cauliflower (if used), and the creamy cheese sauce. Fold everything together until all vegetables are thoroughly coated. Pour the mixture into the prepared baking dish and spread evenly.
