Instructions

  1. Prepare Spiced Syrup: In a saucepan, combine molasses, sugar, and spices. Heat gently until dissolved and fragrant. Cool completely.
  2. Whip Cream: In a chilled bowl, whip heavy cream until soft peaks form.
  3. Add Espresso: Brew espresso and allow to cool. Mix with spiced syrup.
  4. Combine Base: Gently fold syrup-espresso mixture into whipped cream with a spatula, keeping texture airy.
  5. Chill Mousse: Spoon into glass cups or ramekins. Refrigerate for 3–4 hours until set.
  6. Garnish & Serve: Top with whipped cream, cookies, or cocoa powder. Serve chilled.
