  • 3 large yellow onions, thinly sliced
  • 2 pounds ground beef (80/20 blend)
  • 1 tablespoon ketchup
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups Gruyere cheese, freshly shredded
  • 12 slices thick Texas toast bread
  • 8 teaspoons mayonnaise (for grilling)
  • ⅓ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon black pepper
  • 1 tablespoon fresh garlic, minced (about 3 cloves)
  • 1 teaspoon fresh parsley, chopped

Instructions

  1. Caramelize the onions: Melt 2 tablespoons of butter in a large skillet over medium-low heat. Add thinly sliced onions and cook slowly, stirring occasionally, for 30-60 minutes until deeply golden brown and sweet. Remove from skillet and set aside.
  2. Prepare the patty mixture: In a bowl, gently combine ground beef with ketchup, garlic powder, salt, and pepper. Do not overmix. Divide into six equal portions and shape into patties slightly larger than the bread. Make an indentation in the center of each patty.
  3. Cook the patties: Heat the same skillet over medium-high heat with the remaining 1 tablespoon of butter. Cook patties for 3-4 minutes per side. During the last minute of cooking, sprinkle about ⅓ cup of Gruyere cheese over each patty to melt.
  4. Assemble the patty melts: Spread 1 teaspoon of mayonnaise on the bottom side of six bread slices. Place a cheese-topped patty on the un-mayonnaised side of the remaining six bread slices. Pile a generous amount of caramelized onions on top of each patty. Top with the remaining bread slices, mayonnaise-side down.
  5. Grill the patty melts: Heat a skillet over medium heat. Grill assembled patty melts for 3-5 minutes per side until the bread is golden brown and the cheese is gooey and melted. Press gently with a spatula.
  6. Craft the zesty aioli (optional): In a small bowl, combine ⅓ cup mayonnaise, lemon juice, black pepper, minced garlic, and chopped parsley. Stir until well combined. Serve aioli with grilled patty melts.
