Ingredients

- 12 large flour tortillas (10-inch size)
- 1 pound thinly sliced roast beef
- 12 slices Provolone cheese, or ½ pound shredded Provolone
- 2 tablespoons unsalted butter, melted, for brushing
- Optional: 1-2 tablespoons mayonnaise or Dijon mustard for spreading on tortillas
- For the Au Jus:
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon dried thyme
- Pinch of red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Caramelize the onions: Melt 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium-low heat. Add sliced onions, ½ teaspoon salt, and ¼ teaspoon pepper. Cook slowly for 30-45 minutes until deeply golden brown and sweet. Set aside.
- Make the au jus: In a saucepan, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, thyme, and optional red pepper flakes. Simmer for 15-20 minutes. Whisk in the cornstarch slurry and stir until slightly thickened. Keep warm.
- Prepare tortillas and fillings: Warm tortillas until pliable. If using, spread a thin layer of mayonnaise or Dijon mustard on each tortilla. Layer cheese, then roast beef, then caramelized onions onto each tortilla.
- Roll the tortillas: Tightly roll each tortilla from the filled edge, tucking in the sides to create a snug log.
- Cook the roll-ups: Pan-fry in melted butter over medium heat for 3-4 minutes per side until golden brown and crispy. Alternatively, bake at 375°F (190°C) for 15-20 minutes, or air fry at 375°F (190°C) for 8-12 minutes, flipping halfway.
- Serve: Let roll-ups rest for 1-2 minutes. Slice diagonally into 2-3 pieces. Arrange on a platter and serve immediately with warm au jus for dipping. Garnish with parsley, if desired.
