  • Dumplings
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 1 tbsp melted butter
  • Optional: chopped cooked chicken for extra protein

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion and sauté for 3–4 minutes until softened. Add garlic and cook 30 seconds.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Stir in frozen vegetables, parsley, thyme, salt, and pepper. Reduce heat to a simmer.
  5. In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter just until combined.
  6. Drop spoonfuls of dumpling dough into the simmering soup.
  7. Cover and cook for 10–12 minutes, until dumplings are puffed and cooked through.
  8. Taste and adjust seasoning. Serve hot.
