Description
Creamy Tuscan Shrimp Rotini is a quick and delicious dish featuring tender shrimp in a garlic-parmesan cream sauce with spinach and sun-dried tomatoes, all tossed with rotini pasta.

- 1 lb (450 g) large shrimp, peeled & deveined
- 1 tbsp olive oil
- 1 tbsp butter
- ½ tsp paprika
- ½ tsp Italian seasoning
- Salt & pepper to taste
- 2 cloves garlic, minced
- 1 tbsp butter (for sauce)
- 1 small shallot or ½ onion, finely diced
- 3 cloves garlic, minced (for sauce)
- ½ cup sun-dried tomatoes (in oil), chopped
- 1 cup heavy cream
- ½ cup chicken broth (or pasta water)
- ½ cup grated parmesan cheese
- 1 cup fresh spinach
- ½ tsp Italian seasoning (for sauce)
- ¼ tsp red pepper flakes (optional)
- Salt & pepper to taste (for sauce)
- 10 oz (300 g) rotini pasta
- Salt for boiling
Instructions
- Boil rotini in salted water until al dente. Reserve ½ cup pasta water, then drain.
- Heat olive oil + butter in a pan. Add shrimp, seasoning, paprika, garlic, salt & pepper. Cook 2–3 min per side, until pink and lightly golden. Remove and set aside.
- In the same pan, add 1 tbsp butter. Sauté shallot/onion until soft. Add garlic and sun-dried tomatoes; cook 1 minute. Pour in heavy cream + chicken broth (or pasta water). Stir in parmesan, Italian seasoning, black pepper, and red pepper flakes. Add spinach and let it wilt. Simmer 2–3 minutes until slightly thickened.
- Add the cooked shrimp back into the sauce. Add the rotini and toss to coat. If sauce thickens too much, add a splash of pasta water. Taste and adjust salt, pepper, and parmesan.
