Description

Creamy Tuscan Shrimp Rotini is a quick and delicious dish featuring tender shrimp in a garlic-parmesan cream sauce with spinach and sun-dried tomatoes, all tossed with rotini pasta.


Ingredients

  • 1 lb (450 g) large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • Salt & pepper to taste
  • 2 cloves garlic, minced
  • 1 tbsp butter (for sauce)
  • 1 small shallot or ½ onion, finely diced
  • 3 cloves garlic, minced (for sauce)
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 1 cup heavy cream
  • ½ cup chicken broth (or pasta water)
  • ½ cup grated parmesan cheese
  • 1 cup fresh spinach
  • ½ tsp Italian seasoning (for sauce)
  • ¼ tsp red pepper flakes (optional)
  • Salt & pepper to taste (for sauce)
  • 10 oz (300 g) rotini pasta
  • Salt for boiling

Instructions

  1. Boil rotini in salted water until al dente. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil + butter in a pan. Add shrimp, seasoning, paprika, garlic, salt & pepper. Cook 2–3 min per side, until pink and lightly golden. Remove and set aside.
  3. In the same pan, add 1 tbsp butter. Sauté shallot/onion until soft. Add garlic and sun-dried tomatoes; cook 1 minute. Pour in heavy cream + chicken broth (or pasta water). Stir in parmesan, Italian seasoning, black pepper, and red pepper flakes. Add spinach and let it wilt. Simmer 2–3 minutes until slightly thickened.
  4. Add the cooked shrimp back into the sauce. Add the rotini and toss to coat. If sauce thickens too much, add a splash of pasta water. Taste and adjust salt, pepper, and parmesan.
