Instructions

  1. Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes.
  2. While the potatoes boil, melt butter in a skillet over medium heat; add shallots and cook until golden brown, about 10-15 minutes.
  3. Drain the potatoes and return them to the pot; add avocados, heavy cream, salt, and pepper. Mash until smooth.
