- 2 ripe avocados, pitted and scooped

- 2 tbsp unsalted butter
- 1/4 cup heavy cream (or milk)
- Salt and pepper to taste
Instructions
- Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes.
- While the potatoes boil, melt butter in a skillet over medium heat; add shallots and cook until golden brown, about 10-15 minutes.
- Drain the potatoes and return them to the pot; add avocados, heavy cream, salt, and pepper. Mash until smooth.
- Fold in caramelized shallots until well combined.
- Serve hot, garnished with fresh herbs if desired.
