- 1 cup fresh or frozen cranberries
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking pan.
- In a medium bowl, combine the 1 1/2 cups flour, softened butter, 1/3 cup sugar, and salt. Mix until a crumbly dough forms.
- Press the dough into the prepared baking pan, making sure to cover the bottom evenly.
- In a food processor, pulse the cranberries, 3/4 cup sugar, eggs, 2 tablespoons flour, and lemon juice until smooth.
- Pour the cranberry curd filling over the prepared crust.
- Bake for 30-35 minutes, or until the filling is set and the edges are lightly golden.
- Allow the bars to cool completely before cutting and serving.
