Description
A warm and creamy one-pot meal featuring sausage, potatoes, wild rice, and vegetables in a silky broth.
Ingredients

- 1 lb ground Italian sausage
- 2 tbsp butter
- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 3 medium potatoes, peeled and diced
- 1/2 cup cooked wild rice
- 1 tsp fresh thyme leaves
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- In a large pot, brown the sausage over medium-high heat until fully cooked. Remove with a slotted spoon and set aside.
- Add butter to the pot. Sauté onion, carrot, and celery for 6–8 minutes. Add garlic and cook for 1 more minute.
- Sprinkle flour over vegetables and stir to coat. Cook for 2 minutes.
- Slowly add chicken broth while stirring. Add potatoes and thyme. Bring to a boil, then reduce to a simmer and cook 15–20 minutes.
- Stir in cooked wild rice and browned sausage. Simmer 10 minutes.
- Add heavy cream, salt, and pepper. Simmer 5 more minutes. Do not boil.
- Ladle into bowls and garnish with parsley if desired. Serve warm.
Notes
- This chowder is perfect for cold nights.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Feel free to add more vegetables as desired.
