Coconut Bounty Bars are a delicious treat made with shredded coconut and coated in chocolate.
Ingredients

- For the Coconut Filling
- 2 cups shredded coconut (unsweetened)
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- For the Chocolate Coating
- 8 oz dark chocolate (or milk chocolate), chopped
- 1 tablespoon coconut oil (optional)
Instructions
- In a medium bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until well combined.
- Line an 8×8-inch baking dish with parchment paper. Press the coconut mixture firmly into the dish to form an even layer, compacting it well.
- Refrigerate the coconut layer for about 30 minutes until firm.
- Remove the chilled coconut layer from the dish using the parchment paper and cut into rectangular bars, about 1×2 inches.
- In a microwave-safe bowl, combine the chopped chocolate and coconut oil if using. Heat in 30-second intervals, stirring between each, until fully melted and smooth.
- Using a fork or dipping tool, dip each coconut bar into the melted chocolate until fully coated, allowing excess chocolate to drip off.
- Place the coated bars on a baking sheet lined with parchment paper.
- Refrigerate for about 15–20 minutes until the chocolate is set.
- Serve the Coconut Bounty Bars chilled or at room temperature and enjoy.
