Delicious chocolate mousse layered on rich brownies.

- For the Brownies
- 1/2 cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- For the Chocolate Mousse
- 1 cup heavy cream, divided
- 4 oz semisweet chocolate, finely chopped
- 2 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.
- In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely in the pan.
- In a small saucepan, heat 1/2 cup of the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate, stirring until smooth and fully melted. Let cool slightly.
- In a clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
- In another bowl, whip the remaining 1/2 cup of heavy cream until soft peaks form.
- Gently fold the melted chocolate mixture into the whipped cream until combined. Then gently fold in the beaten egg whites until no white streaks remain.
- Once the brownies have cooled, spread the chocolate mousse evenly over the top.
- Cover and refrigerate for at least 2 hours to allow the mousse to set.
- Cut into squares and serve chilled.
