Ingredients

  • For the Brownies
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • For the Chocolate Mousse
  • 1 cup heavy cream, divided
  • 4 oz semisweet chocolate, finely chopped
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely in the pan.
  6. In a small saucepan, heat 1/2 cup of the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate, stirring until smooth and fully melted. Let cool slightly.
  7. In a clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
  8. In another bowl, whip the remaining 1/2 cup of heavy cream until soft peaks form.
  9. Gently fold the melted chocolate mixture into the whipped cream until combined. Then gently fold in the beaten egg whites until no white streaks remain.
  10. Once the brownies have cooled, spread the chocolate mousse evenly over the top.
  11. Cover and refrigerate for at least 2 hours to allow the mousse to set.
  12. Cut into squares and serve chilled.
