This rich and moist chocolate donut cake combines the best of both worlds. - 1 1/4 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup sour cream
- 1/2 cup whole milk
- 1/2 cup brewed coffee, cooled
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups powdered sugar (for glaze)
- 4 to 5 tablespoons whole milk (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- Pinch of salt (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 10-cup bundt pan.
- In a large bowl, beat the butter and granulated sugar on medium speed until light and fluffy, about 3 to 4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the sour cream, whole milk, and cooled brewed coffee until smooth.
- In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture in three additions, alternating with the wet mixture. Mix on low speed until just combined.
- Pour the batter into the prepared bundt pan and smooth the top. Bake for 40 to 45 minutes, or until a toothpick comes out with a few moist crumbs.
- Let the cake cool in the pan for 10 to 15 minutes, then invert onto a wire rack to cool completely.
- In a medium bowl, whisk together the powdered sugar, 4 tablespoons of milk, vanilla extract, and a pinch of salt until smooth.
- Once cooled, pour the glaze over the top of the bundt cake and let it set for about 15 minutes before slicing and serving.
