- 2 fillets Anchovy Fillets in Oil (Use Worcestershire sauce as a vegetarian alternative)
- 1 clove Garlic (Minced, fresh preferred)
- 1/2 cup Freshly Ground Black Pepper (Adjust quantity to taste)
- 1/2 cup Parmesan Cheese (Grated; Pecorino can be used)
- 1/2 cup Olive Oil (Extra virgin olive oil is best)
- 4 tablespoons Unsalted Butter (Can replace with olive oil for a dairy-free option)
- 1 cup Panko Breadcrumbs (Provides a lighter texture)
- 1 teaspoon Kosher Salt (Adjust based on dietary needs)
- 2 medium Romaine Lettuce Hearts (Torn into bite-sized pieces)
Instructions
- In a blender, combine the juice and zest of two medium lemons, a tablespoon of Dijon mustard, two anchovy fillets, a minced garlic clove, a pinch of freshly ground black pepper, and half a cup of grated Parmesan cheese. Blend until smooth, then slowly drizzle in half a cup of extra virgin olive oil while the blender runs.
- In a skillet over medium heat, melt four tablespoons of unsalted butter. Add two minced garlic cloves and sauté for about a minute until golden. Stir in one cup of panko breadcrumbs, cooking for around 4-6 minutes until golden brown.
- Tear the romaine lettuce into bite-sized pieces and place them in a large mixing bowl. Pour the creamy dressing over the romaine and toss gently. Add in half of the toasted breadcrumbs and a sprinkle of remaining Parmesan, mixing again.
- Sprinkle the remaining garlic butter breadcrumbs on top, followed by more grated Parmesan cheese and fresh black pepper. Serve immediately.
