Blueberry Cream Cheesecake Lasagna is a layered dessert featuring a creamy cheesecake layer, blueberry topping, and graham cracker crust.


Ingredients

  • For the Cheesecake Layer:
    • 8 ounces cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy whipping cream
  • For the Blueberry Layer:
    • 2 cups fresh blueberries (or frozen, thawed and drained)
    • 1/4 cup granulated sugar
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch
    • 1/4 cup water
  • For Assembly:
    • 1 package (14.4 ounces) graham crackers
    • 1 cup whipped topping (such as Cool Whip)
    • Extra blueberries (for garnish, optional)

Instructions

  1. In a medium saucepan, combine the fresh blueberries, granulated sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring gently until the mixture comes to a boil and thickens, about 5-7 minutes. Remove from heat and let cool.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  3. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  6. In a 9×13 inch baking dish, place a layer of graham crackers at the bottom.
  7. Spread half of the cheesecake mixture over the graham crackers.
  8. Spoon half of the blueberry mixture over the cheesecake layer.
  9. Add another layer of graham crackers, followed by the remaining cheesecake mixture and then the remaining blueberry mixture.
  10. Finish with a layer of whipped topping spread evenly over the top.
  11. Cover the dish with plastic wrap and refrigerate for at least 4-6 hours, or overnight, to allow the layers to set.
  12. Before serving, garnish with extra blueberries if desired.
  13. Cut into squares and serve chilled.
