- 1/2 cup melted coconut oil
- 1 cup flour
- 1 cup quick oats
- 1/3 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raspberry preserves
Instructions
- Preheat the oven to 350°F (175°C) and lightly coat an 8×8-inch baking pan with non-stick cooking spray, or line it with parchment paper for easier removal.
- Combine the melted coconut oil, flour, quick oats, maple syrup, coconut sugar, baking powder, and salt in a large bowl, mixing until the mixture resembles coarse crumbs that hold together when pressed.
- Press about two-thirds of this oat mixture firmly into the bottom of the prepared pan, creating an even base layer.
- Spread the raspberry preserves evenly over the base layer, leaving about a half-inch border around the edges.
- Sprinkle the remaining oat mixture over the preserves, gently pressing down to ensure it adheres.
- Bake for 25-30 minutes until the top turns a beautiful golden brown and the edges begin to pull away slightly from the sides of the pan.
- Let the bars cool completely in the pan on a wire rack before cutting.
