Description

These berry oat bars transform breakfast into something truly special—golden, crumbly squares bursting with sweet-tart berry flavor in every bite.

Ingredients

Scale
  • 1/2 cup melted coconut oil
  • 1 cup flour
  • 1 cup quick oats
  • 1/3 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup raspberry preserves

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly coat an 8×8-inch baking pan with non-stick cooking spray, or line it with parchment paper for easier removal.
  2. Combine the melted coconut oil, flour, quick oats, maple syrup, coconut sugar, baking powder, and salt in a large bowl, mixing until the mixture resembles coarse crumbs that hold together when pressed.
  3. Press about two-thirds of this oat mixture firmly into the bottom of the prepared pan, creating an even base layer.
  4. Spread the raspberry preserves evenly over the base layer, leaving about a half-inch border around the edges.
  5. Sprinkle the remaining oat mixture over the preserves, gently pressing down to ensure it adheres.
  6. Bake for 25-30 minutes until the top turns a beautiful golden brown and the edges begin to pull away slightly from the sides of the pan.
  7. Let the bars cool completely in the pan on a wire rack before cutting.

Notes

  • Cutting too soon results in a crumbly mess rather than neat squares.
